Blueberry Muffin Recipe Ingredients
  • 1 egg
  • 1 cup buttermilk
  • 1/4 cup salad oil
  • 2 cup flour
  • 1/4 cup sugar
  • 1/8 cup packed brown sugar
  • 1/2 tsp. soda
  • 2 tsp. baking powder
  • 1 tsp. salt
  • 3/4 c. blueberries, well drained
  • 3/4 c. apples, chopped small
Blueberry Muffin Recipe Instructions:
Heat oven to 375 degrees. Grease 12 muffin cups. Beat egg, stir in buttermilk, oil and apple. Mix all dry ingredients until flour is moistened. Batter should be lumpy. Add the berries. Fill cups 2/3 full.

NUT - CRUNCH TOPPING:
1/3 c. chopped nuts (pecans are perfect)
1/2 tsp. cinnamon
2 tbsp. butter

Mix together and sprinkle on top of muffins. Bake 30-35 minutes. Makes 12.

Blueberry Muffin Recipe Ingredients
  • 2 cups (approx 280 grams) Self Raising flour
  • 3/4 tsp salt 1/3 cup (approx. 67 grams) sugar
  • 2 tsp baking powder
  • 2 eggs
  • 4 tbsp butter, melted
  • 3/4 cup (175 ml) milk
  • 2 cups (approx. 300 grams?!?) blueberries, well-dried
  • Optional: 1 tsp grated orange or lemon rind muffin pan lined with muffin papers (I use one 12 cup and one 6 cup pan)

Wash the blueberries and drain. Sprinkle a tea towel with flour and roll the blueberries in it. Wrap the now lightly floured berries and leave for a good 30 minutes or so to dry completely.
Preheat oven to 425F/210C/Gas Mark 7.
Sift the flour, salt, sugar, and baking powder into a large mixing bowl.
In a separate bowl, beat the eggs. Add the melted butter and then the milk.
Quickly stir the liquid ingredients into the dry, confining yourself to only 10-15 strokes. Leave the lumps as too much handling will result in tough muffins.
Add the floured blueberries and the optional rind if you are using. Briefly fold in the berries. Spoon into the prepared muffin pans, allowing the mixture to fill about 2/3 of the cup. Bake in the hot oven for 15-20 minutes. Muffins will be a light golden colour when fully cooked. R
Remove at once from their tins. Serve with plenty of butter. To really make this a meal, scramble some eggs to eat with the muffins!

Preheat oven to 400 degrees F (200 degrees C). Grease muffin cups or line with muffin liners.
Combine 1 1/2 cups flour, 3/4 cup sugar, salt and baking powder. Place vegetable oil into a 1 cup measuring cup; add the egg and enough milk to fill the cup. Mix this with flour mixture. Fold in blueberries. Fill muffin cups right to the top, and sprinkle with crumb topping mixture.
To Make Crumb Topping: Mix together 1/2 cup sugar, 1/3 cup flour, 1/4 cup butter, and 1 1/2 teaspoons cinnamon. Mix with fork, and sprinkle over muffins before baking.
Bake for 20 to 25 minutes in the preheated oven, or until done. Enjoy the blueberry mufffins !

Ingredients:
Wet Stuff:

* 1 cup flaxseed egg substitute
* 2 cups soy, rice or almond milk
* 1 cup canola oil
* 1 1/2 cups honey or substitute
* 1 1/2 Tbsp vanilla

Dry Stuff:

* 7 cups whole wheat pastry flour, sifted
* 2 Tbsp baking powder
* 1 1/2 tsp baking soda
* 2 Tbsp soy powder

Goodies:

* 2 1/2 cups blueberries, frozen and chopped in a food processor
* 2 1/2 cups blueberries, frozen, whole
* Raw, unrefined sugar for sprinkling on top

INSTRUCTIONS:

1. Sift all dry stuff into large bowl and set aside.
2. Whip all wet stuff 2 - 3 minutes in a high-speed KitchenAid mixer.
3. Blend wet into dry and fold in goodies using a spatula or wooden spoon. Do NOT over mix.
4. Spray muffin pans with vegetable spray, or use muffin papers.
5. Using a cookie scoop, fill muffin cups 3/4 full with batter.
6. Sprinkle a little raw sugar on each muffin before baking.
7. Bake at 375 degrees for 22-25 minutes, or until muffin springs back when touched.
8. Makes 30 regular size muffins

INGREDIENTS
  • 2 cups cake flour
  • 3/4 cup granulated sugar
  • 1-1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 pinch salt
  • 3 ounces cream cheese, cut in cubes
  • 2 teaspoon lemon juice
  • 2 teaspoon vanilla extract
  • 2 eggs
  • 1/4 cup completely melted butter
  • 1/2 cup milk
  • 1 cup blueberries, fresh or frozen
INSTRUCTIONS
Preheat oven to 350°. Line the cups of a muffin tin with 12 paper liners. Combine flour, sugar, baking powder, soda, and salt in a mixing bowl. Stir well; set aside.

Mix cream cheese, lemon juice, and vanilla until smooth. Add eggs and mix until blended. Stir in hot melted butter and mix until smooth. Mix in milk. Add dry ingredients and stir until all dry is incorporated. Do not over mix. Fold the blueberries into the batter.

Pour an equal amount of batter into each muffin cup, filling each about 2/3 to 3/4 full. Bake in preheated 350° oven for 30 minutes. Cool on rack 15 minutes. Makes 12 muffins.
